Lucas' Chocolate Cupcakes

Cupcake Ingredients

• 1 cup all-purpose flour

• 1 cup sugar

• 6 tablespoons cocoa powder

• 1 teaspoon baking powder

• ¾ teaspoon baking soda

• ½ teaspoon salt

• ½ cup milk

• ¼ cup oil

• 1 large egg

• 1 teaspoon vanilla extract

• ½ cup boiling water


Cupcake Instructions

Preheat oven to 350°F. Line a 12-cup muffin pan with liners. In a large bowl whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add milk, oil, egg, and vanilla. Mix until smooth. Slowly stir in the boiling water (the batter will be thin — this is normal). Fill cupcake liners about 3/4 full. Bake 18–22 minutes, until a toothpick inserted in the center comes out clean. Cool completely before frosting.

Chocolate Frosting Ingredients

• ¼ cup butter, softened

• ¼ cup cocoa powder

• 2 cups powdered sugar

• ½ teaspoon vanilla extract

• Pinch of salt

• 3–4 tablespoons milk


Frosting Instructions

Beat butter and cocoa powder until smooth. Add powdered sugar, vanilla, and salt. Add milk 1 tablespoon at a time until frosting is smooth and spreadable. Frost completely cooled cupcakes.
