French Onion Soup

Ingredients
4 onions, all different kinds but red.
6 cups of beef broth
1 stick of butter
Mozzarella cheese
Instructions
Melt 1 stick butter in soup pot. Slice onions and sauté in butter, till soft. Try not to brown. Add beef broth to cover onions. Let simmer for about an hour. Place a piece of Italian bread on bottom of bowl. Add your soup. Top with shredded, or thickly sliced, mozzarella cheese and broil until cheese is melted/crispy.
