Ingredients
5 boneless skinless chicken breasts
2 cups sliced carrots
1 1/2 cups sliced celery
1 onion, diced
4-6 garlic cloves, minced
10 cups low sodium chicken broth
1 tablespoon dried parsley
1/2 teaspoon salt, pus more to taste
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper
1/4 teaspoon red pepper flakes
1 20 oz. package tortellini, uncooked
Instructions
Add uncut chicken to the bottom of a 6 qt. slow cooker, followed by vegetables. Add all of the remaining ingredients except for the tortellini. Cover and cook on high for 3-4 hours
Remove chicken to a cutting board and let rest for 10 minutes. Turn heat to low and add tortellini and cook approximately 15 minutes. Shred chicken and and add back to slow cooker. When tortellini is completely cooked, taste and add additional salt and pepper if desired.
