Ingredients
1½ pounds ground chicken
½ cup breadcrumbs
1 large egg, lightly beaten
1 stick celery, minced
2 green onions, minced
3 cloves garlic, minced
½ teaspoons salt
¼ teaspoons ground black pepper
⅓ cups Franks buffalo sauce
3 tablespoons blue cheese dressing
Instructions
Preheat oven to 400 degrees. Line a standard size baking sheet with parchment paper, set aside. In a large mixing bowl, combine the ground chicken, panko and egg. Allow the panko to soak in the egg for 5 minutes. Add the celery, green onion, garlic, salt and pepper. Using your hands, mix together just until combined. Shape into meatballs and place onto the prepared baking sheet. Place in the oven and bake for about 15-20 minutes or until cooked throughout. Remove from the oven, place the meatballs in a bowl, add the buffalo sauce and gently toss to combine. Serve immediately, drizzled with dressing and extra green onion, if desired.
