Blueberry Muffins

Ingredients

  • 2/3 cup white sugar

  • 1 egg

  • 1/2 cup vegetable oil

  • 1/3 cup milk

  • 1 teaspoon vanilla

  • 1 1/4 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup sour cream

  • 1 cup blueberries

  • About 1 tablespoon white sugar for the top (optional)

 

Instructions

Preheat oven to 375 degrees. Place muffin liners in muffin tin. Combine the sugar, egg, oil, milk, and vanilla in a bowl. Add the flour, baking powder and salt and stir until no longer lumpy. Stir in the sour cream. Fold in the blueberries. Evenly distribute the batter in the muffin tin. Sprinkle the tops with sugar. Bake muffins for about 25 minutes.
