Ingredients
2 sticks butter
3 egg yolks
1/2 cup sugar
3 cups flour
2 teaspoons vanilla extract
1 jar raspberry preserves
Confectioners sugar
Instructions
Using a hand mixer, cream butter, yolks and sugar until fluffy. Add vanilla and flour and mix well. Roll dough 1/4 inch thick and cut out circles with fluted 2 inch round cookie cutter. For the top half of sandwiches, use a thimble or the cap of vanilla extract bottle to cut out hole in the middle of cookies. Place all rounds on ungreased cooke sheet. Bake at 325 degrees for about 12 minutes. After cookies are cool, spread bottoms with raspberry preserves. Place rounds with the holes on top of the cook with preserves then sprinkle with confectioners sugar.
